Ingredients:
For the Crust:
200g graham cracker crumbs
100g melted butter
50g sugar
For the Filling:
2 cups mashed sweet potatoes (about 2 medium sweet potatoes)
1 cup brown sugar
1/2 cup milk
1/2 cup heavy cream
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon vanilla extract
For the Topping:
2 cups mini marshmallows
Instructions:
Prepare the Crust:
Preheat the oven to 180°C (350°F). In a bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
Press the mixture into the bottom and sides of a 23 cm (9-inch) pie dish. Bake for 10 minutes and allow to cool.
Prepare the Filling:
In a large bowl, combine mashed sweet potatoes, brown sugar, milk, heavy cream, eggs, cinnamon, nutmeg, and vanilla extract. Mix until smooth.
Pour the mixture into the prepared crust and bake for 45 minutes, or until set and a toothpick inserted into the center comes out clean.
Add the Topping:
Remove the pie from the oven and sprinkle mini marshmallows evenly over the top.
Return the pie to the oven and bake for an additional 5-10 minutes, or until marshmallows are golden brown.
Cool and Serve:
